Lemon Sole in a charred leek cheese sauce

Overview

This Davidstow cheese sauce is given depth of flavour with charred leeks and a pinch of nutmeg. Try serving it with hassleback potatoes and wilted greens for a rustic lunch or hearty supper.

Ingredients

•   2 Fillets of lemon sole

•   2 tbsp plain flour

•   ½ tsp sea salt

•   ½ tsp cracked black pepper

•   50g butter

•   For the cheese sauce

•   50g butter

•   1 whole leek, finely sliced

•   2 cloves of garlic

•   1 tbsp plain flour

•   100g grated Davidstow Classic 12 month

•   100ml whole milk

•   75ml Cider

•   1 tbsp Chopped chives

•   Pinch of nutmeg

Recipe

1.       In a saucepan melt your butter and saute your leeks and garlic until soft. After cooking for 4-5 mins add plain flour and cook out. Then deglaze the pan with cider and add in your cheese and milk. Stir until thick and velvety. Season with salt and a pinch of nutmeg.

2.      Coat your fish in seasoned flour and pan fry in melted butter for 3-4 mins each side.

3.       Pour your melted cheese sauce over your fish and garnish with chopped chives. Serve with roasted potato and wilted greens.
