Davidstow cheese & ham crepes

This is a classic way to enjoy Davidstow Cheddar with homemade ham and is too good to only enjoy on Pancake Day. Try adding mushrooms, a fried egg or even roasted vegetables to your pancake fillings.

Recipe skill level: Easy.

Ingredients

For the pancakes:
  • 110g Plain Flour
  • 2 Eggs
  • 200ml Milk
  • 75ml water
  • 50g Butter
  • Pinch Salt

Directions

  1. In a mixing bowl whisk your eggs and flour together until smooth and then gradually add your milk and water into the batter. Season with a pinch of salt and beat until smooth. Use a spatula to push any residue from the sides of the bowl down whilst whisking. Finish your batter with 2 tbsp of melted butter.
  2. Preheat your pancake frying pan with a little butter and cook your pancakes for ½ min each side until golden.
  3. Fill with grated Davidstow cheese and a generous slice of ham. Serve with garden salad leaves.
