Davidstow Cheddar

Our Ingot Trio takes you on a journey through the maturation of our unique cheddar, from our 20 Month Crackler through to our renowned 60 Month Special Reserve.

Davidstow cheddar is made with exacting care at our multi-award winning creamery in the Cornish village of the same name, overseen at every step of the way by our expert cheese makers and graders.

 

Inspired by our location, nestled between the moor and the sea, our recipe has been meticulously crafted for over 70 years, ensuring every bite is never less than perfect.

Crackler: Intense yet rounded Extra Mature Cheddar; typically matured for 20 months.

Reserve: Multi-award-winning, richly complex and ‘crunchy’ vintage cheddar; typically matured for 40 months.

Special Reserve: Unparalleled Vintage cheddar, prized by Michelin Star chefs for its intensity of flavour and long-lasting aftertaste; typically matured for 60 months.

Chocolarder chocolate

Falmouth’s Chocolarder, founded in 2012, is Cornwall’s only bean to bar chocolatier, crafting chocolate with 100% organically grown cocoa beans sourced directly from South American farmers, blended with top quality locally sourced ingredients wherever possible. In addition to creating delicious, award-winning chocolate, Chocolarder are doing their part in the craft chocolate industry with their mission to create ethically responsible and sustainable chocolate.

Asháninka 72% Dark Chocolate – Cocoa solids 72% mínimum
A dark chocolate crafted in Cornwall using sustainably sourced cocoa beans from the heart of the Peruvian Amazon.

Early notes of green and red fruit, with undertones of hazelnut slowly give way to a long ending of burnt sugar caramel. The chocolate’s aroma is surprisingly delicate for such a dark bar, with a whisper of sweet notes that delightfully complement our Davidstow cheddar.

Cornish Honeycomb 50% Milk Chocolate – Cocoa solids 50% minimum.  Milk solids 18% minimum.
Fresh tree honey from Cornish black bees is used to make Chocolarder’s honeycomb, which delivers deep, heavy honey flavours, toffee sweetness and a pleasing crunch alongside their creamy milk chocolate.

Wild Gorse Flower 50% Milk Chocolate Cocoa solids 50% minimum.  Milk solids 19% minimum.
Hand-picked Cornish gorse flowers steeped in cocoa butter impart a heady, warm coconut scent to Chocolarder’s milk chocolate for a unique flavour. Characterised by notes of warming toasted coconut with hints of fudge and roast nut, ending in light red fruit.

We strive to supply all our Davistow cheddar with a min 2 week shelf life.

Keep refrigerated below 5°C.
Remove from fridge 30 minutes before consumption.
To keep this product at its best once opened, ensure pack is kept properly sealed.

Suitable for freezing. For best results, grate before freezing, then use in cooking.

Keep cool (10-18°C) and dry.

The wax we use to protect and present our cheese is not recyclable.

Other Information

Our waxed products may look irregular in shape; this is because unlike many waxed cheeses on the market they are not extruded. Rather they are cut directly from a larger block of our cheddar and then waxed. This ensures we maintain the characteristic ‘flinty’ texture our cheese is renowned for. Due to the age of the cheese it will not always cut to a uniform shape and can therefore result in a more ‘rustic’ finish.
